Cutting your own ravioli at home also means you control the filling, from simple ricotta and spinach to richer meat or mushroom blends.

Al Dente shapes both cutters for an easy, even cut in a single press, so sealing the edges is simpler and less likely to let filling escape during cooking. Working on a lightly floured surface helps stop the dough sticking, and moistening the edges around the filling before cutting gives a tighter seal. Once cut, a dry pastry brush removes excess flour before the ravioli goes onto a semolina-dusted tray, ready to cook in salted, boiling water for three to four minutes or to freeze for later. The cutters are handwash only.
